Well, I regret to report that the lamb shanks were...not good. Sufficiently not good that the pizza escape clause was invoked. (The rule is that Daniel will attempt in good faith to eat anything I cook for dinner. If he doesn't like it, he can go get pizza instead without recrimination.) I'm not sure exactly what went wrong - the shanks were tough and chewy, which implies inadequate braising time (I gave them 2.5 hours), but they were also not very flavorful, which implies a more fundamental problem.
More research needed.
The silver lining is that the carrots that were braised along with the lamb shanks in a mixture of white wine, chicken broth, sage, celery seed, pepper, and lemon zest, were perhaps the best cooked carrots I have ever eaten. I may be able to salvage this recipe into a terrific braised root vegetable side dish.
Also, the house still smells fantastic.
I think the next new recipe I try will be vegetarian.
